My Favorite Baby Shower Menu Ideas
1. Crispy Parmesan Fish or Chicken Fillets
Ingredients:
Yield: 6 servings
6 white fish fillets, or boneless skinless chicken breasts halves
1 egg, beaten
1/2 cup grated parmesan cheese
1/2 cup cornflake or bread crumbs
1/4 teaspoon ground red pepper (optional)
Directions:
On a plate, mix the beaten egg and fillets; sprinkle with parmesan cheese. Prepare a second plate with crumbs and pepper, and coat the fillets.
You can bake or cook the fillets in an oiled large skillet.
For baking, heat oven to 450 degrees. In a greased shallow baking dish, bake 5 to 10 minutes or until fillets flakes easily with fork. If you choose chicken fillets, bake 15 to 20 minutes.
If you choose to cook, place the fillets in a lightly oiled skillet over medium heat. Cook for 5 minutes if you choose fish fillets and 10 minutes for chicken, or until golden brown.
2. Dijon – Salmon
Ingredients:
4 salmon fillets
1/4 cup prepared Dijon mustard
1/4 cup mayonnaise
salt and pepper to taste
1/4 cup dry bread crumbs
Directions:
Preheat oven to 400 degrees F. Place salmon in a shallow baking pan lined with aluminum foil. Mix Dijon mustard and mayonnaise and cover each fillet with a thin layer. Season with salt and pepper. Top with bread crumbs, and bake in a preheated oven for about 15 minutes.
3. Quesadillas – Mexican Style
Ingredients:
Yield: 6 quesadillas
1 cup corn flour
1 teaspoon salt
1/2 cup water
2 cup oil for frying (could be vegetable oil)
Mashed potatoes (2 medium size peeled potatoes)
½ teaspoon salt
Potato masher
½ shredded lettuce
Directions:
Mashed potatoes: Boil the potatoes into a saucepan with water and salt for about 15-20 minutes. When done, peel them and mash them.
Quesadilla:
Mix corn flour with the salt and water to make a soft dough and clay. This process may take 8-10 minutes. Make sure the flour is well mixed. You must add water as needed.
When dough is ready, cut to form balls about 1.5 inches in diameter. Use a clean plastic bag, cut it in half and put each ball of dough in between the two plastic halves. Flatten with a heavy skillet to form tortillas.
Fill the tortillas with the mashed potatoes, and close tortilla by the edge. Fry in hot oil for about 3 minutes or until quesadilla take a light brown. Make sure the oil cover the quesadilla and fry each side for 1 ½ minute. Drain the quesadilla on absorbent paper.
Prepare and fry one quesadilla at the time.
Serve with shredded lettuce and mild hot sauce.
4. Mexican – Burritos
Ingredients:
6 flour tortillas
1 cup refried beans
2 avocados
6 sausages
shredded lettuce
1 cup cream
Green chili mild or hot sauce
Directions:
With a knife cut the sausage lengthwise into 4 pieces. In a skillet with oil, fry the sausages for about 3 minutes. When fried, remove excess oil with a napkin. In another pan fry the beans.
Peel avocados, remove the bone, and grind in a blender with 1/4 cup cream until you have a guacamole.
Heat flour tortillas in the microwave until soft.
With a tablespoon, put a thin layer of refried beans in the heated flour tortilla. Place 4 pieces of sausage over beans. Add the guacamole. Add a teaspoon of cream and top with shredded lettuce. Top with salsa and fold the tortilla like a taco.
5. Baked – Fried Sesame Chicken
Ingredients:
Yield: 4 servings
2 tablespoon low-medium soy sauce
4 small boneless chicken breasts, skinless
3 tablespoon sesame seeds
2 tablespoon flour
¼ tablespoon salt
¼ tablespoon pepper
Olive oil spray
Directions:
Preheat oven to 400 degrees F. Place soy sauce in a flat bowl, and coat chicken. In another flat bowl, combine sesame seeds, flour, salt, and pepper. Remove chicken from the soy sauce and place it in the mixture. Spray a baking dish with olive oil. Add chicken and spray each one with olive oil. Bake at 400 degrees for 45 minutes, or until done.
