Baby Shower Food Recipes – Sandwiches

1. Smoked Salmon Sandwich

Ingredients:

Yield: 2 sandwiches

1-2 green onions
¼ cup radish sprouts (or watercress)
4 oz cream cheese, softened
1 tablespoon source cream
1 tablespoon lemon juice
1 tablespoon chopped fresh dill
4 slices rye bread
4 oz thinly sliced smoked salmon
Pepper to taste

Directions:

Trim and wash the green onions, and slice them into fine rings. Wash the radish sprouts and pat them dry. Stir together the cream cheese, sour cream, lemon juice, green onions, and fresh dill to make a creamy paste. Spread half of the cream cheese mixture on the slices rye bread. Fold the salmon slices, place them on top of the cream cheese, and sprinkle with pepper. Top each sandwich with 2 tablespoon of the radish sprouts. Cover with the top halves, and that´s all.

You can also cut the sandwiches in half to make 4 small servings.

2. Italian Panini

Ingredients:

Yield: 2 sandwiches

15-20 leaves arugula
2 oz parmesan cheese
4 slices Italian bread
2 tablespoon pesto
2 tablespoon crème fraîche (fresh cream)
2 oz prosciutto (or other Italian meat) thinly sliced

Directions:

Wash the arugula and pat it dry. Finely grate the parmesan cheese. Spread 2 slices of the bread with pesto, and the other 2 slices with crème fraîche. On the bread pieces with spread pesto, layer the arugula, prosciutto, and parmesan cheese. Top with the other pieces of bread. Cut the sandwiches in half and enjoy.

3. Cucumber and Shrimp Sandwich

Ingredients:

Yield: 8 medium size sandwiches

4 tablespoon butter, softened

1/3 cup shredded cucumber, well drained
1 cup shrimp, cooked and chopped
2 teaspoons green onion, minced
1 ½ teaspoon lemon juice
1/8 teaspoon dill
¼ cup plain yogurt, and add extra, for garnish
Salt and black pepper to taste
8 slices white bread
¾ cup parsley, finely minced, as garnish

Directions:

Spread bread slices with butter. Mix all remaining ingredients except parsley. Spread 4 slices of bread with the ingredients mixed. Cover with remaining slices. Cut the crusts, then cut each sandwich in half.

Using a spatula or small spoon, spread a thin layer of yogurt on the edges of each sandwich and press the edges with chopped parsley.
