Recipes For Baby Shower Appetizers

1. Guacamole Dip

Ingredients:

3 to 4 ripe Avocados
1/4 cup of cilantro
1/2 medium size onion
2 medium size tomatoes
1/2 teaspoon of salt (or to taste)
2 large jalapenos (seeds removed)
1 Lemon

Directions:

On a cutting board, chop the onion, tomatoes, cilantro and jalapeño. Mince together until it turns into a paste. Move them to a bowl. Cut the avocados in half and remove the bones. Remove the avocado with a spoon and place it in the bowl with the mixture of tomatoes, cilantro, onion and jalapeños. Mix all until it turns into a paste. Add lemon juice and mix together. Add salt or garlic powder to taste.

2.Fresh Fruit Delight

Ingredients:

Fresh Fruit in Season — (apples, melons, kiwi, etc.)
Cocktail toothpicks
Cream Cheese
Marshmallow Cream

Directions:

Combine fresh fruits in season. Use cocktail toothpicks to dip in equal parts of cream cheese and marshmallow cream mixed together. That´s a delicious appetizer.

3. Parmesan Chicken Wings

Ingredients:

Yield, 8 servings

1 cup grated parmesan cheese
1 tablespoon of Heaping, fresh and finely chopped
1 parsley
1 tbsp oregano
1 tbsp salt
1/2 tsp ground pepper
2 pounds chicken wings
½ cup of butter, melted

Directions:

In a bowl mix parsley, cheese, oregano, salt and pepper. Dip each piece of chicken into the butter and roll in the mixture until well coated. Place chicken on a greased baking sheet. In a preheat oven to 375 degrees, bake for 45 minutes, turning when brown.

4. Sweet Sour Meatball

Ingredients:

Yield: 40 meatballs.

1 pound lean ground beef
1 cup soft bread crumbs
1 egg, slightly beaten
2 tbsp minced onions
2 tbsp milk
1 clove garlic, minced
1/2 tsp salt
Dash of pepper
1 tbsp vegetable oil
1 cup chili sauce
1 cup red currant or grape jelly

Directions:

In a deep skillet pre heat the oil and add the meatballs. Cover the skillet and cook over low heat for 5 minutes. Remove excess fat with a spoon. Mix chili sauce and grape jelly or red currant, and pour the mixture into meatballs. Cook for about 10 to 12 minutes, stirring until jelly is melted and sauce thickens, basting occasionally with a spoon.

5. Bacon Roll-ups

Ingredients:

1 Loaf of thin sandwich bread Spread
3 or 5 oz jars of Old English Cheese
1 pound of Bacon

Directions:

Remove crust from bread and flatten bread slices with a rolling pin. Spread bread with cheese spread and roll up jelly roll style. Cut into thirds and put 1/3 of a strip of bacon around each roll and secure with a toothpick. Bake on rack, turning once for about 15 minutes at 400~. Serve hot! Variations: Instead of Old English Cheese, use cream cheese with chives; peanut butter; or cream cheese and horseradish.

6. Cheese Straws

Ingredients:

1 cup of Flour
½ tsp of salt
½ tsp of ginger, powdered
1/3 cup of Butter
4 oz of sharp cheddar cheese
1/4 cup of sesame seed, toasted
1/2 tsp of Worcestershire
2 1/2 tablespoons of Cold water

Directions:

Mix first ginger, flour, butter, sesame seeds, and salt in food processor until a coarse meal. Then add the shredded cheese to the processor. Add the Worcestershire and water to the mixture until moist and have soft dough. Place the dough on a lightly floured surface and roll out to 1/8 “thick. Cut into strips 3” long and 1 1/2 “wide. Freeze strips on baking sheets unbaked. Not thaw before baking. Bake in an ungreased pan at 400 degrees until golden and crisp.

7. Cheese-Spinach

Ingredients:

2 eggs
6 tbsp whole grain wheat flour
1 1/2 cups cheddar cheese, shredded
10 oz frozen spinach
2 cups cottage cheese
1 pinch ground nutmeg
1 dash black pepper
3 tbsp wheat germ

Directions:

Beat eggs in a large bowl first, and then add the flour until smooth. Thaw and drain the spinach and add to egg mixture, along with cheddar cheese, cayenne, pepper, cheese, and nutmeg. Mix all ingredients together.

8. Beef and Cream Cheese Ball

Ingredients:

16 ounces of Cream cheese
1 bottle dried beef slices, minced
Chopped scallions
Garlic powder or garlic salt

Directions:

Mix softened cream cheese and other ingredients. Shape. Let chill overnight. Serve with crackers.

9. Crabmeat

Ingredients:

8 ounces of cream cheese — softened
1/4 cup of cocktail sauce
8 ounces of crab meat

Directions:

Spread cream cheese on serving plate. Pour cocktail sauce over cream cheese; top with crab meat Serve with crackers or cocktail rye bread slices.

10. Eggplant Caviar

Ingredients:

3 Eggplants
3 Garlic cloves, minced
1/3 cup Olive oil
1 tbsp Minced parsley (or Onion, Basil or Anchovies)
1 Lemon, only the juice
Salt and pepper to taste

Directions:

Cut eggplants in half and lengthwise. Broil for 50 minutes, turning so they do not burn and are very tender. Remove the meat from the eggplants and discard the seeds. Mash with a food mill or coarse puree by hand. Whisk in olive oil. Add garlic, parsley, lemon juice, salt and pepper.

You have a delicious dip that can be spread on bread or vegetables.

11. Ellen’s Boursin

Ingredients:

8 ounces of Cream cheese
2 Garlic cloves — peeled
1 tablespoon of Each fresh basil — dill and
6 Black olives — pitted

Directions:

Blend cream cheese, garlic and herbs in a food processor until smooth. Chop in olives. Transfer to a small bowl and keep refrigerated until ready to serve.

Boursin is generally served as an appetizer spread on crackers, or stuffed into cherry tomatoes.
